Mathias Letsch

Mathias Letsch, was born in 1958 in Hamburg and lived in the United States for a year, where he got to know and appreciate the delicious bagels that are available everywhere.

Mathias Letsch

„Above all, a bagel has to be 'chewy'. In other words: When you bite into a bagel, you should have something to chew on. Just as Italian pasta tastes best when it is cooked 'al dente', a good bagel must have a wafer-thin, chewy crust and be soft but 'compact' on the inside - similar to a pretzel roll“

Company structure & evolution

When the two founders met in Hamburg in 1997 and discovered that they shared a common love for the tasty yeast dough curls, they came up with the idea of opening an American-style bagel bakery with its own catering service. They pursued their plan with determination and apprenticed with Jewish master bakers in New York to learn the traditional craft of bagel baking.

After they had successfully passed an examination at the German "Handwerkskammer" (Chamber of Crafts) and the special machines for dough processing had arrived from the USA (New York), they were able to realize their dream: In January 2001, the American Bagel Company opened for business in the newly equipped bakery on Grindelallee in Hamburg-Rotherbaum. In November 2006, the bakery was expanded and is now located at Warnstedtstrasse 8, 22525 Hamburg.

Since then, the American Bagel Company's delicious bagels, made according to the original American recipe, have enjoyed steadily growing popularity. The American Bagel Company is registered as a craft business in the Hanseatic City of Hamburg and supplies its products to customers all over the world, including Germany and the rest of Europe.

At the beginning of 2018, Mathias Letsch retired after 17 years at the American Bagel Company. Sebastian Wüsthoff took over his responsibilities.

At the end of 2020, Randall Adams also retired and the company was transformed into a GmbH, with Sebastian Wüsthoff taking over as Managing Director.

Since 2021, Eugen Swiderski has been registered in the Hamburg Register of Craftsmen as Operations Manager.

Jan Bessler joined the team in 2022 and shortly afterwards took over the areas of sales and quality management as an authorized signatory.
